The other day I was watching a friend of mine on a live Facebook and she was talking about creating your meal plan, shopping, and meal prep. This inspired me to plan a bit more than usual.
One of my favorite things about having Cole home (check out his post here) is that he loves to cook. When Cole lived in Kansas City he found several recipes that he would make and now he is sharing them with me and Jeff.
So when I was planning I decided one night we would have Turkey Meatloaf that Cole had made for us a couple of weeks ago. I love meatloaf and it is just a great comfort food. This meatloaf has mushrooms in it but you would never know it. I think that is what makes it so moist.
Here is the original recipe Cole used the first time he made the meatloaf. We also made cauliflower mash and roasted Brussel sprouts. We did double the recipe so that we could have it again later in the week and not have to cook again. This helps to not have to cook so much during the week.
